The dish is composed of a poor fish, but very tasty also for the addition of sweet and sour onions.
The use of bittersweet in the Sicilian cuisine has been handed down to us by the Arabs who used to combine sugar with vinegar, for a very practical reason, a better preservation of food, at a time when refrigerators did not yet exist.
Flour the paddlefish fillets and fry them, add salt and set aside.
Meanwhile, cut the onion into thin slices, fry in a pan with olive oil. When it begins to wither, perhaps with the help of a sip of water, add the diluted sugar in the vinegar, let it evaporate and cover the previously fried spatula fillets.
You can also add a handful of raisins and a spoonful of honey to the onion mixture.

- 5 paddlefish fillets
- Flour for frying
- Salt and pepper

- 500 gr. of red onions
- Olive oil
- 50 gr. of sugar
- 50 gr. of wine vinegar
